Everything Potato Waffles

Everything Potato Waffles are a delicious twist on classic! Made with shredded potatoes and everything bagel seasoning, they're delicious all on their own or topped with our easy dill sour cream.

Ingredients

  • 2 pounds baking potatoes peeled, shredded and squeezed dry
  • 1 medium yellow onion diced
  • 2 large eggs lightly beaten
  • 3 Tablespoons all purpose flour OR gluten free flour
  • 3 Tablespoons melted butter plus more for the waffle iron
  • 1 teaspoon baking powder
  • 2 Tablespoons everything bagel seasoning
  • 1/2 teaspoon salt

Instructions

  • Chop the onion; set aside.
  • Wash, peel, and shred the potatoes. (I used the medium hole on my cheese grater.) Squeeze the shredded potatoes dry using paper towels.
  • In a large mixing bowl, combine the shredded potatoes, diced onions, eggs, flour, melted butter, baking powder, everything bagel seasoning and salt. Use a large spoon to mix well.
  • Heat a waffle iron and brush with additional melted butter. Working in batches, scoop the potato mixture into the waffle iron and cook until golden brown and crispy.
