Everything Potato Waffles are a delicious twist on classic! Made with shredded potatoes and everything bagel seasoning, they're delicious all on their own or topped with our easy dill sour cream.
2poundsbaking potatoespeeled, shredded and squeezed dry
1medium yellow oniondiced
2large eggslightly beaten
3Tablespoonsall purpose flour OR gluten free flour
3Tablespoonsmelted butterplus more for the waffle iron
1teaspoonbaking powder
2Tablespoonseverything bagel seasoning
1/2teaspoonsalt
Instructions
Chop the onion; set aside.
Wash, peel, and shred the potatoes. (I used the medium hole on my cheese grater.) Squeeze the shredded potatoes dry using paper towels.
In a large mixing bowl, combine the shredded potatoes, diced onions, eggs, flour, melted butter, baking powder, everything bagel seasoning and salt. Use a large spoon to mix well.
Heat a waffle iron and brush with additional melted butter. Working in batches, scoop the potato mixture into the waffle iron and cook until golden brown and crispy.
