Easy Chocolate Truffles

Rich, decadent Chocolate Truffles... made with just two ingredients! These delicious little bites are easy to make and fun to decorate with all your favorites. The perfect way to satisfy all your chocolate cravings!

Ingredients

  • 8 ounces high-quality chocolate 60-70% cacao
  • 2/3 cup heavy whipping cream
  • 1 Tablespoon butter softened to room temperature
  • coatings chopped nuts, candy sprinkles, cocoa powder, melted chocolate

Instructions

  • Finely chop the chocolate and transfer it to a medium mixing bowl. Add the softened butter to the same bowl.
  • Heat the heavy cream until hot but not boiling; pour over the chocolate and butter; let it stand for 5 minutes.
  • Stir the mixture together until smooth. Refrigerate for one hour until firm.
  • Using a small cookie scoop, portion the ganache into 2 tablespoon portions and use your hands to roll into truffles. The mixture will be sticky!
  • Roll the truffles into your choice of coatings.
  • Refrigerate or enjoy immediately.

Notes

  • Use high-quality chocolate (60-70% cacao)
  • Don't use chocolate chips, as they won't melt into truffle consistency
  • Use heavy whipping cream (not half and half or any other alternative)
  • To save time, pour the ganache into a shallow dish before refrigerating so it can chill more quickly and consistently
  • Consider wearing plastic gloves to roll the truffles. The mixture will be quite sticky!
  • Press the toppings gently into the truffles so they really stick
