Prepare the noodles according to package instructions. I would suggest cooking them al dente so they will hold up better in the salad. Drain and rinse immediately with cold water to cool.
Combine the cooled cooked noodles with the remaining ingredients and mix well in a large bowl. If time allows, let the salad rest before serving to allow the flavors to blend.
Enjoy as a side salad on its own, as a dip with potato chips or pretzels, or crush a few potato chips on top for a crunchy, salty twist!
