Spray a 12 cup muffin tin with cooking spray, then press one wonton wrapper into each cup. Bake at 350°F for 7-8 minutes. Remove from the oven and set aside.
In a small mixing bowl, combine the cooked chicken and taco seasoning, stirring to coat.
Drain and rinse the beans and set aside.
Chop the tomato and cilantro; slice the jalapeño.
Layer the ingredients in the pre-baked wonton cups, starting with the seasoned chicken, the black beans, the queso sauce, and the shredded cheese. Bake at 350° for an additional 7-8 minutes, until the cheese is melted.
Remove from the oven and garnish with tomatoes, cilantro, sour cream, and sliced jalapeños.
