Buffalo Chicken Mac and Cheese

Ingredients

  • 1/2 c. salted butter
  • 1/2 c. all purpose flour
  • 1 tsp. garlic salt
  • 1 tsp. onion powder
  • 1/2 tsp. pepper
  • 5 c. whole milk
  • 8 oz. shredded cheddar cheese
  • 8 oz. shredded monterey jack cheese
  • 8 oz. cream cheese softened
  • 1/3 c. buffalo sauce
  • 1 lb. macaroni noodles
  • 1 package Buffalo Style Boneless Chicken Bites
  • 1 green onion sliced

Instructions

  • Preheat oven to 400° F.
  • Cook noodles according to package instructions. Drain and set aside.
  • In a large saucepan, melt butter over medium heat. Add flour and cook, stirring, 5-6 minutes until mixture is thickened.
  • Add seasonings and stir.
  • Slowly add milk, stirring constantly. Continue cooking and stirring until mixture is thickened and bubbly.
  • Add shredded cheese and cream cheese; mix until cheese is completely melted.
  • Stir in buffalo sauce and cooked noodles.
  • Transfer to a 9x13 inch casserole dish.
  • Add mac & cheese and chicken bites to the preheated oven; bake for 20 minutes. Prepare chicken bites according to package instructions.
  • Chop chicken and add to mac & cheese.
  • Sprinkle with chopped green onions and season with pepper.
