Ingredients

  • 3 cups breakfast potatoes
  • 4 eggs scrambled
  • 4 sausage links
  • 4 strips bacon
  • 2/3 cup shredded cheese
  • salt & pepper to taste

Instructions

  1. Prepare the breakfast potatoes according to recipe or package instructions. If using leftover potatoes, re-heat them in a medium skillet on the stovetop.
  2. Chop the sausage links and bacon to desired size pieces, then fry them in a small skillet until browned and crispy. (*For even cooking, add the sausage first and cook 1 minute before adding the bacon.)
  3. In a small bowl, whisk the eggs. Add 1 Tablespoon milk or water as desired and season with salt and pepper to taste. Add the whisked eggs to the skillet with the sausage and bacon. Scramble over medium heat.
  4. Add the cheese. Sprinkle the eggs with cheese, then cover for one minute until cheese is melted.
  5. Assemble & garnish. Divide the potatoes between 2 bowls. Add eggs and garnish as desired.
