Ingredients

  • 3 cups breakfast potatoes
  • 4 eggs scrambled
  • 4 sausage links
  • 4 strips bacon
  • 2/3 cup shredded cheese
  • salt & pepper to taste

Instructions

  • Prepare the breakfast potatoes according to recipe or package instructions. If using leftover potatoes, re-heat them in a medium skillet on the stovetop.
  • Chop the sausage links and bacon to desired size pieces, then fry them in a small skillet until browned and crispy. (*For even cooking, add the sausage first and cook 1 minute before adding the bacon.)
  • In a small bowl, whisk the eggs. Add 1 Tablespoon milk or water as desired and season with salt and pepper to taste. Add the whisked eggs to the skillet with the sausage and bacon. Scramble over medium heat.
  • Add the cheese. Sprinkle the eggs with cheese, then cover for one minute until cheese is melted.
  • Assemble & garnish. Divide the potatoes between 2 bowls. Add eggs and garnish as desired.
