Apple Cranberry Coleslaw is the perfect way to mix things up for fall! Loaded with fresh apples, dried cranberries, chopped walnuts, and green onions, this coleslaw is crunchy, sweet, and so delicious!

Ingredients

Coleslaw

  • 14 ounce bag 3-color coleslaw mix
  • 1 large apple chopped
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 4 green onions sliced

Dressing:

  • 3/4 cup mayo
  • 3/4 cup plain yogurt or sour cream
  • 1/4 cup honey
  • 3/4 teaspoon dried ground ginger

Instructions

  • Combine coleslaw ingredients in a large bowl.
  • In a small bowl, combine dressing ingredients and mix well.
  • Pour dressing over coleslaw and stir until evenly coated.
  • *For a less creamy coleslaw, use 1/2 cup mayo, 1/2 cup plain yogurt, 3 Tablespoons honey, and 1/2 teaspoon ginger.

Notes

Recipe Variations

  • Use freshly shredded cabbage in place of coleslaw mix
  • Substitute broccoli slaw for coleslaw
  • Add or substitute sliced pears
  • Substitute red onion for the green onion OR omit the onion altogether
  • Substitute dried cherries for the dried cranberries
  • Use any type of apple (Granny Smith, Gala, Honeycrisp, or Golden Delicious would all work well)
  • Add your favorite crumbled cheese (feta, goat cheese, or blue cheese)
  • Use any type of chopped nuts in place of walnuts OR omit the nuts altogether
