Ingredients

For the fries

  • 3 medium sweet potatoes about 2 pounds total
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

For the curry ketchup

  • 1/2 cup ketchup
  • 2 teaspoons curry powder
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon honey
  • 1/8 teaspoon cayenne pepper

Instructions

  • Wash and peel the sweet potatoes. Cut off the ends, cut into strips lengthwise, and cut each strip into several thin slices. (For even cooking, be sure fries are similar in size.)
  • In a large mixing bowl, combine the sweet potato slices, oil, salt, and pepper. Toss well to coat.
  • Air fry at 390° F for 10-15 minutes, shaking the basket every 5 minutes.
  • Remove from air fryer and season with additional salt as desired.
  • Serve with curry ketchup or your dipping sauce of choice.

Notes

Recipe variations:
  • Add additional seasonings to the olive oil mixture, such as curry powder, garlic powder, onion powder, or Cajun seasoning
  • Cut the potatoes into wedges instead of fries (increase air frying time accordingly)
  • Make them sweet by tossing them in a mixture of oil, cinnamon, and sugar
  • Sprinkle them with fresh grated Parmesan cheese as soon as they come out of the air fryer
  • Use a combination of regular and sweet potato fries and follow the recipe instructions
