Lightly season both sides of the pork chops with salt and pepper.
Place the flour in one bowl, the beaten eggs in another bowl, and in a third bowl combine the bread crumbs, Parmesan, salt, and pepper.
Dip each pork chop into the flour until completely coated; shake off any excess. Next, dip into the beaten eggs until completely coated. Finally, dip into the bread crumb mixture until completely coated.
Place pork chops in a single layer in the air fryer basket (I was able to fit 2 pork chops at a time). Spray pork chops with olive oil using an oil mister (**do NOT use aerosol cooking spray, as it can damage the inside of the basket**). Air fry at 375° F for 9-14 minutes, flipping and misting with olive oil halfway through. Exact cooking time will depend on the thickness of the meat. Pork is done once internal temperature reaches 145° F.
Remove from air fryer basket and garnish with fresh minced parsley, salt, and pepper to taste.
