Measure out 1 cup of dill pickle chips, draining the liquid.
Using 3 shallow bowls, separate the flour into one, the beaten eggs into a second, and the bread crumbs, Parmesan, salt & pepper into a third.
Dip each pickle slice first into the flour, then into the beaten eggs, and then into the bread crumb mixture. *Repeat the process if desired for extra crispiness.
Spray the inside of an air fryer basket with oil, then add the breaded pickle chips in batches. Air fry at 400° for 3-4 minutes per side, until golden brown and crispy. Sprinkle with additional salt as desired.
