Ingredients

  • 1 cup dill pickle chips
  • 1/4 cup flour
  • 3 eggs
  • 1 cup panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Measure out 1 cup of dill pickle chips, draining the liquid.
  • Using 3 shallow bowls, separate the flour into one, the beaten eggs into a second, and the bread crumbs, Parmesan, salt & pepper into a third.
  • Dip each pickle slice first into the flour, then into the beaten eggs, and then into the bread crumb mixture. *Repeat the process if desired for extra crispiness.
  • Spray the inside of an air fryer basket with oil, then add the breaded pickle chips in batches. Air fry at 400° for 3-4 minutes per side, until golden brown and crispy. Sprinkle with additional salt as desired.

Notes

Recipe variations

  • Use sweet & sour or spicy pickle chips for a fun twist
  • Use pickle spears instead of chips
  • Substitute regular bread crumbs for the panko crumbs
  • Add dried dill to the breading mixture
  • Skip the double coating
  • Make it dairy-free by omitting the Parmesan cheese
