3-Cheese Loaded Italian Salad

This Loaded Italian Salad boasts an array of fresh vegetables, 3 types of cheese, and a homemade white balsamic vinaigrette....all on a bed of mixed greens. Light, fresh, and oh so satisfying!

Ingredients

  • 5 ounces mixed greens
  • 1/2 cup diced grape tomatoes
  • 1/2 cup diced cucumbers
  • 1/2 cup diced yellow pepper
  • 1/2 cup halved kalamata olives
  • 1/2 cup shredded provolone or mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/2 cup crumbled gorgonzola cheese
  • 1/2 cup cooked crumbled bacon
  • 1/4 cup chopped pecans

White Balsamic Vinaigrette Dressing

  • 1/3 cup light olive oil
  • 1/3 cup white balsamic vinegar
  • 2 Tablespoons grated Parmesan cheese
  • 1 Tablespoon minced red onion
  • 1 Tablespoon minced fresh basil
  • 1 minced garlic clove
  • 1 teaspoon dijon mustard
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper

Instructions

  • Toss all salad ingredients together in a large bowl.
  • Combine dressing ingredients, mix well, and pour desired amount over salad.
