Fresh Green Bean Salad

Ingredients

Salad

  • 4 c. fresh green beans trimmed and cut into 1 1/2 inch pieces
  • 2 c. sliced chopped yellow squash
  • 2 c. grape tomatoes
  • 1 c. chopped red onion
  • 8 oz. feta cheese cubed

Dressing

  • 1/2 c. olive oil
  • 1/4 c. lemon juice
  • 2 tsp. dried parsley
  • 1 tsp. kosher salt
  • 1 tsp. fresh cracked pepper

Instructions

  • Combine all salad ingredients in medium bowl.
  • Combine dressing ingredients and shake well to mix.
  • Pour dressing over salad and stir gently.
