1/2c.red pepperchopped
1/2mangochopped
1/2avocadochopped
2Tbsp.shredded carrots
2Tbsp.shredded purple cabbage
1Tbsp.sliced almonds
For marinade (optional):
2Tbsp.orange juice
1Tbsp.olive oil
1tsp.lime juice
1Tbsp.soy sauce
1Tbsp.fresh cilantrominced
1/2Tbsp.honey
1clovegarlicminced
1/4tsp.ginger
1/4tsp.allspice
For the dressing:
1/4c.olive oil
2Tbsp.lime juice
1Tbsp.honey
1tsp.dijon mustard
1/4tsp.ginger
1/4tsp.garlic powder
1/8tsp.pepper
pinchof allspice
Instructions
(Optional) Combine ingredients for marinade; pour over chicken breast and marinate 1 hour or overnight.
Grill chicken until no longer pink.
