Ingredients

  • 1 5 oz. container BrightFarms Spring Mix
  • 1 Simple Truth boneless skinless chicken breast, marinated
  • 1/2 c. fresh pineapple chopped
  • 1/2 c. red pepper chopped
  • 1/2 mango chopped
  • 1/2 avocado chopped
  • 2 Tbsp. shredded carrots
  • 2 Tbsp. shredded purple cabbage
  • 1 Tbsp. sliced almonds

For marinade (optional):

  • 2 Tbsp. orange juice
  • 1 Tbsp. olive oil
  • 1 tsp. lime juice
  • 1 Tbsp. soy sauce
  • 1 Tbsp. fresh cilantro minced
  • 1/2 Tbsp. honey
  • 1 clove garlic minced
  • 1/4 tsp. ginger
  • 1/4 tsp. allspice

For the dressing:

  • 1/4 c. olive oil
  • 2 Tbsp. lime juice
  • 1 Tbsp. honey
  • 1 tsp. dijon mustard
  • 1/4 tsp. ginger
  • 1/4 tsp. garlic powder
  • 1/8 tsp. pepper
  • pinch of allspice

Instructions

  • (Optional) Combine ingredients for marinade; pour over chicken breast and marinate 1 hour or overnight.
  • Grill chicken until no longer pink.
  • Assemble salad by topping spring mix with pineapple, red pepper, mango, avocado, shredded carrots, purple cabbage, sliced almonds, and grilled chicken breast.
  • Combine ingredients for dressing; shake well.
  • Pour dressing over salad as desired.
