Heat olive oil in a large skillet over medium-high heat. Add the ground beef and diced onion. Cook, breaking up the meat, 5-7 minutes or until the onion is softened and the meat is browned. Drain grease if necessary.
Add the chopped peppers and mince garlic. Continue cooking, stirring regularly, about 3-4 minutes or until peppers are softened.
Add the tomato paste and cook, stirring, 1-2 minutes.
Add the diced tomatoes, rice, chicken broth, worcestershire sauce, and seasonings. Stir to combine.
Bring the mixture to a boil, then reduce heat to simmer. Cover and cook for 18-20 minutes or until rice is tender. Stir.
Sprinkle with shredded cheese; cover and let stand 2-3 minutes until cheese is melted.
Remove from heat. Garnish with fresh parsley as desired.
