Ingredients

  • 1 lb. fresh strawberries
  • 1 1/2 c. granulated sugar
  • 1 lemon

Instructions

  • Wash strawberries; remove stems and cut into fourths.
  • Place strawberries in a large bowl.
  • Add sugar and the juice of one lemon. Stir ingredients together until a thick syrup forms.
  • Transfer mixture to a medium heavy bottom saucepan. Add lemon zest (optional) and use a potato masher to mash strawberries.
  • Heat over low heat just until sugar dissolves. Increase heat to medium, bring mixture to a boil, and boil 20 minutes, stirring often.
  • Remove from heat and transfer to a sterilized glass jar.

Notes

Recipe variations:
  • Substitute orange juice & zest for the lemon juice & zest
  • Omit lemon zest
  • Use a combination of strawberries, raspberries, and blackberries
  • Reduce sugar to 3/4 or 1 cup
  • Reduce cook time to 5 minutes, remove from heat, and stir in 2 Tbsp. chia seeds
  • Use 3/4 c. maple syrup in place of sugar
