Ingredients

lb.
raw chicken breast
cubed

c.
red potatoes
cubed
2
small zucchini
cubed
1
yellow pepper
cubed
1
small eggplant
cubed

c.
pitted kalamata olives
1/2
c.
olive oil

lemon juice

Tbsp.
oregano

minced dried onion

Instructions
Preheat oven to 400 degrees.
Line a large rimmed baking sheet with foil.
Arrange chicken and veggies on baking sheet.
Combine ingredients for dressing and whisk well; pour over chicken and veggies on baking sheet.
Bake for 20-25 minutes or until potatoes are tender.
Remove from oven and sprinkle with feta cheese before serving.
