Shaved Brussel Sprout Salad

Ingredients

  • 4 c. shaved brussel sprouts
  • 3/4 c. chopped apples
  • 1/2 c. chopped bacon
  • 1/2 c. dried cranberries
  • 1/2 c. crumbled goat cheese
  • 1/3 c. sliced green onions
  • 6 Tbsp. white balsamic vinegar
  • 1/4 c. olive oil
  • 2 tsp. honey
  • 1/4 tsp. ground ginger
  • 1/8 tsp. dijon mustard

Instructions

  • 1. Spread brussel sprouts into the bottom of a shallow salad bowl.
  • 2. Top with chopped apples, bacon, dried cranberries, goat cheese, and green onions.
  • 3. In a small container with a lid, combine dressing ingredients and shake vigorously.
  • 4. Pour dresing over salad and toss to coat.
