Mint Chocolate Cookie Brittle

  • 1 stick 1/2 c. butter, softened
  • 1/2 c. granulated sugar
  • 1/2 c. cocoa powder
  • 1/4 c. packed brown sugar
  • 1 tsp. vanilla
  • 2 egg whites
  • 1 c. flour
  • 1/2 tsp. baking soda
  • 1 c. Dark Chocolate Mint M&M's


  1. Combine butter, sugars, cocoa powder and vanilla and mix until smooth.
  2. Stir in egg whites until incorporated.
  3. Add flour and baking soda; mix until thoroughly combined.
  4. Stir in most of M&M's, reserving some for top.
  5. Cover a large jelly roll pan with aluminum foil. Spray with cooking spray and spread dough as thinly as possible (should cover all or most of a 16×12 inch pan). Press additional M&M's into dough.
  6. Bake at 375 degrees for 14 min.
  7. Cool on pan; break or cut into irregular pieces.
