Asian Chicken Quinoa Bowl

Ingredients

  • 1 1/2 c. cooked quinoa
  • 1/2 c. cooked chicken chopped
  • 1/2 c. mandarin oranges
  • 1/4 c. sliced almonds
  • 1/4 c. chopped celery
  • 1 sliced green onion

Dressing

  • 1/4 c. canola or sesame oil
  • 2 Tbsp. rice wine vinegar
  • 1 tsp. sugar
  • fresh parsley
  • salt
  • pepper

Instructions

  • Combine quinoa, chicken, celery, and green onion in a medium bowl. Stir to combine.
  • In a separate container, mix dressing ingredients and shake/stir until well blended.
  • Pour dressing over quinoa mixture.
  • Gently stir in mandarin oranges and top with sliced almonds.
