Ramen Noodle Sumi Salad

  • 2 14 oz. packages coleslaw mix
  • 2 packages Ramen noodles, broken into small pieces *reserve seasoning packets
  • 8 scallions sliced
  • 1 c. sliced toasted almonds
  • ¾ c. canola oil
  • ½ c. rice wine vinegar
  • ¼ c. granulated sugar
  • 1 tsp. salt
  • 1 tsp. pepper


  1. Combine coleslaw mix and Ramen noodles in a very large bowl.
  2. Add scallions and toasted almonds and stir to evenly distribute.
  3. In a small saucepan, combine canola oil, rice wine vinegar, ramen noodle seasoning packets, sugar, salt and pepper and bring to a boil. Stir until sugar dissolves. Remove from heat.

  4. Let dressing cool; pour half over coleslaw mix and stir to combine.
  5. Refrigerate until ready to serve.

  6. Before serving, add remaining dressing.
