Ingredients

  • 3 cups quick cooking oats
  • 1/4 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 2 teaspoons baking powder
  • 1/4 teaspoons salt
  • 1 cup pumpkin puree
  • 2 cups milk
  • 2 eggs
  • 1 Tablespoon oil
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees.
  • Grease 18 regular size muffin cups; set aside.
  • In a large mixing bowl, combine dry ingredients.
  • Add remaining ingredients and stir until well blended.
  • Divide batter evenly among prepared muffin cups, filling almost all the way to the top.
  • Bake at 350 degrees 20-25 minutes until tops are set.
