Ingredients

  • 16 ounces cream cheese softened to room temperature
  • 2 cups finely shredded cheddar cheese
  • 1 package dry ranch dressing mix
  • 2/3 cups beer I used Spotted Cow
  • 1/2 cup bacon cooked and crumbled
  • 2 Tablespoons sliced green onions

Instructions

  • In a large mixing bowl, combine cream cheese, cheddar cheese, ranch dressing mix, and beer.
  • Use a hand mixer to mix until smooth and creamy.
  • Stir in cooked bacon and green onions, reserving some for garnish.
  • Transfer to a serving bowl and garnish with remaining green onions.

Notes

Recipe variations:
  • Omit the bacon - the recipe is delicious even without it!
  • Add 1 cup cooked, chopped chicken
  • Use fresh minced chives in place of green onions
  • Substitute any of your favorite kinds of beer
  • Use Monterey Jack, Colby Jack, or any type of cheese
  • Serve with veggies, crackers, or crusty bread in place of pretzels
