Huevos Rancheros

Huevos Rancheros is a traditional Mexican breakfast dish that's packed with amazing flavor. Fresh corn tortillas layered with fried eggs, refried beans, cooked salsa, sliced avocado, and cheese... it's a classic recipe that's guaranteed to become a favorite!

Ingredients

  • 4 corn tortillas
  • 1 cup refried beans
  • 4 large eggs
  • 1 1/2 cups salsa
  • 1/2 cup pico de gallo
  • 1 avocado thinly sliced
  • 1/4 cup queso fresco crumbled
  • fresh cilantro minced

Instructions

  • Heat 1 Tbsp. oil in a skillet over medium heat. Add salsa and cook to reduce, stirring regularly, about 5-7 minutes. Remove from heat.
  • Heat refried beans until warm, stirring regularly.
  • In a separate skillet, warm tortillas over medium heat 1 minutes on each side or until edges begin to char. Remove from heat and set aside.
  • In the same skillet, add a small amount of butter and fry the eggs one at a time.
  • Spread beans evenly on top of tortillas. Add one egg to each, then add warm salsa and pico de gallo. Garnish with avocados, queso fresco, and cilantro.

Notes

Recipe variations:
  • Substitute flour tortillas for corn
  • Add two eggs instead of one
  • Scramble the eggs instead of frying them
  • Add cooked bell peppers
  • Add fresh sliced jalapeños as a garnish
  • Substitute whole black beans for refried beans
  • Use any of your favorite cheeses in place of queso fresco
  • Top with hot sauce
