Huevos Rancheros is a traditional Mexican breakfast dish that's packed with amazing flavor. Fresh corn tortillas layered with fried eggs, refried beans, cooked salsa, sliced avocado, and cheese... it's a classic recipe that's guaranteed to become a favorite!
Heat 1 Tbsp. oil in a skillet over medium heat. Add salsa and cook to reduce, stirring regularly, about 5-7 minutes. Remove from heat.
Heat refried beans until warm, stirring regularly.
In a separate skillet, warm tortillas over medium heat 1 minutes on each side or until edges begin to char. Remove from heat and set aside.
In the same skillet, add a small amount of butter and fry the eggs one at a time.
Spread beans evenly on top of tortillas. Add one egg to each, then add warm salsa and pico de gallo. Garnish with avocados, queso fresco, and cilantro.
