Green Goddess Salad

Ingredients

  • 8 ounces lettuce I used butter lettuce
  • 1 cup cucumbers thinly sliced. I used Persian.
  • 1/2 cup radishes thinly sliced
  • 1/3 cup pepitas roasted, salted
  • 1 large avocado thinly sliced
  • 6 green onions thinly sliced
  • 1/2 cup Green Goddess dressing or to taste
  • fresh herbs for garnish

Instructions

  • Wash and sliced the vegetables as directed.
  • Arrange the lettuce in a large salad bowl; top with sliced vegetables and roasted pepitas.
  • Add dressing to taste. Toss before serving.

Notes

Recipe Variations

  • Substitute arugula or spinach for the lettuce
  • Add additional green veggies, such as broccoli, pea pods, or brussels sprouts
  • Add shredded cabbage for extra crunch
  • Add sliced green apples or pears for a touch of sweetness
  • Substitute red onion for the green onion
  • Add crumbled feta, goat cheese, or queso fresco
  • Add sliced jalapeños for a spicy kick
  • Add Pan Fried Chicken or any of your favorite proteins
