Ingredients

  • 3 c. chopped cooked chicken
  • 3/4 c. red grapes halved
  • 2/3 c. chopped canned pineapple (reserve 1 Tbsp. juice)
  • 1/3 c. sliced almonds toasted
  • 1/4 c. chopped celery
  • 1/4 c. golden raisins
  • 1/2 c. mayo
  • 1/4 c. plain Greek yogurt
  • 1 Tbsp. pineapple juice from can
  • 2 tsp. dijon mustard
  • 1 tsp. curry powder

Instructions

  • In a small bowl, combine mayo, plain yogurt, pineapple juice, dijon mustard, and curry powder. Whisk well; set aside.
  • In a separate large bowl, combine chicken, grapes, pineapple, celery, golden raisins, and toasted almonds. 
  • Season lightly with salt and pepper.
  • Add sauce to chicken salad mixture and mix until combined.
  • Serve with crackers, rolls, lettuce wraps, or as desired.
