Ingredients

  • 3 cups dry pasta I used bowtie
  • 1 English cucumber
  • 1 cup halved grape tomatoes
  • 1/4 cup diced red onion
  • 1/2 cup mayo
  • 1 tablespoon lemon juice
  • 1-2 tablespoons fresh minced dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Boil the noodles according to package instructions. Drain and rinse under cold water.
  • While the noodles are boiling, chop the cucumbers, tomatoes, and red onion to desired size.
  • In a small mixing bowl, combine the mayo, lemon juice, fresh dill, salt & pepper and mix well.
  • Combine cooled noodles with veggies and dressing. Mix well. Top with additional fresh dill and fresh cracked pepper as desired.

Notes

Recipe variations:
  • Use any type or shape of pasta
  • Add avocado, bell peppers, and/or fresh spinach
  • Substitute fresh basil for dill
  • Use Miracle Whip in place of Mayo
  • Substitute dried dill for fresh
