Cilantro Lime Rice

Ingredients

  • 2 cups long grain white rice
  • 3 cups water
  • 2 Tablespoons olive oil
  • 2 garlic cloves minced
  • 1 cup chopped fresh cilantro
  • 2 teaspoons lime zest
  • 2 Tablespoons lime juice
  • 1 teaspoon salt

Instructions

  • Heat olive oil in a medium saucepan or pot. Add the minced garlic and uncooked rice; sauté over medium heat for 1-2 minutes or until the garlic is fragrant, stirring often.
  • Add 3 cups of water (or chicken broth) and a pinch of salt to the pot. Bring to a boil, then reduce heat, cover and simmer for 15-20 minutes, according to package instructions.
  • Remove from heat and stir in cilantro, lime juice, lime zest, and 1 teaspoon salt.

Notes

Recipe Variations

  • Use any type of long grain rice (basmati, jasmine, white long grain or brown long grain)
  • Use chicken broth or vegetable in place of water
  • Add additional garlic according to taste
  • Add 1 cup chopped onion and sauté with the garlic
  • Use a combination of fresh lime and lemon juice
  • Substitute fresh parsley, mint, or basil if you don't like the taste of cilantro
  • Make it spicy with a sprinkle of cayenne pepper
