The BEST Cilantro Lime Rice - made with just 5 ingredients and ready in 30 minutes or less. A bright, fresh side dish that instantly elevates any meal!
Heat olive oil in a medium saucepan or pot. Add the minced garlic and uncooked rice; sauté over medium heat for 1-2 minutes or until the garlic is fragrant, stirring often.
Add 3 cups of water (or chicken broth) and a pinch of salt to the pot. Bring to a boil, then reduce heat, cover and simmer for 15-20 minutes, according to package instructions.
Remove from heat and stir in cilantro, lime juice, lime zest, and 1 teaspoon salt.

Recipe Variations
Use any type of long grain rice (basmati, jasmine, white long grain or brown long grain)
Use chicken broth or vegetable in place of water
Add additional garlic according to taste
Add 1 cup chopped onion and sauté with the garlic
Use a combination of fresh lime and lemon juice
Substitute fresh parsley, mint, or basil if you don't like the taste of cilantro
