Ingredients

  • 3 cups cooked chopped chicken (1 rotisserie chicken)
  • 1 cup mayo
  • 1/2 cup red grapes halved
  • 2 stalks celery chopped
  • 2 tablespoons sliced green onions
  • 1/4 cup dried cranberries
  • 1/4 cup finely chopped pecans
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Shred or chop chicken into bite sized pieces.
  • Cut grapes in half.
  • Chop celery and onions.
  • In a medium mixing bowl, combine all the ingredients and mix well.
  • Serve immediately on bread or with crackers OR store in the refrigerator for up to 3 days.

  • Substitute raisins for the dried cranberries
  • Use any type of nuts or omit them altogether
  • Add sunflower seeds for extra crunch
  • Add diced apples for more fruit flavor
