Blackened Chicken

Perfectly seasoned Blackened Chicken.... ready in just 20 minutes! These tender, juicy chicken breasts are coated in the most flavorful blend of spices and pan fried to perfection. Delicious all on their own or in your favorite salad or pasta!

Ingredients

  • 1 pound boneless skinless chicken breasts (2-3 breasts)
  • 3 Tablespoons blackened seasoning
  • 2 Tablespoons olive oil OR avocado oil

Instructions

  • Place each chicken breast in a large plastic bag or between sheets of plastic wrap, wax paper, or parchment paper. Set it on a heavy microwave-safe cutting board and pound it to an even thickness using a meat mallet, rolling pin, or heavy pan.
  • Add the oil to a large skillet and heat over medium heat.
  • Pat the chicken breasts dry with a paper towel, then use your hands to coat them with blackened seasoning.
  • Add the seasoned chicken to the skillet and cook on one side for 5-6 minutes, then flip and cook for an additional 5-6 minutes, until chicken is no longer pink and it reaches an internal temperature of 165° F.
  • Remove from heat and let stand for 5 minutes before slicing.

Notes

Storage & Reheating Tips

Leftover Blackened Chicken can be stored in an airtight container in the refrigerator for up to 5 days. To reheat, add some oil or butter to a small skillet and heat the chicken over medium heat until warmed through. You can also reheat it in the microwave at 30 second intervals, being careful not to overcook. (*For best results, use the skillet method.)
