Tips for Success

Keep your popovers from falling by following these 3 simple tips:
Don't underbake. Be sure you bake your popovers for the time indicated on the recipe. Popovers should be well-browned and firm to the touch.
Keep the oven door shut. Be sure to leave the oven door shut during the first 20 minutes of baking. Opening the door can let in cool air, which can cause popovers to collapse.
Use large eggs. Using small eggs instead of large eggs to make the batter can cause popovers to fall.
