Caramel Apple Muffins

Caramel Apple Muffins - stuffed with caramel and topped with peanut streusel! Yum!!

Ingredients

  • 1 egg
  • 1/2 c.milk
  • 1/4 c. oil
  • 1 c. grated tart apple I used Granny Smith with the skins on
  • 1/2 tsp. cinnamon
  • 1 1/2 c. flour
  • 1/2 c. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 12-14 unwrapped caramels

Topping:

  • 1/2 c. toffee bits near chocolate chips in baking aisle
  • 1/4 c. brown sugar
  • 1/4 c. chopped peanuts

Instructions

  1. Beat egg; stir in milk, oil, apples, and cinnamon.
  2. Mix in flour, sugar, baking soda, and salt. Stir just until flour is moistened.
  3. Line 12 muffin cups with paper liners; fill each halfway with batter.
  4. Place an unwrapped caramel in the center of each cup and divide remaining batter evenly.
  5. Prepare topping and divide evenly among muffin cups and press down gently.
  6. Bake 20-25 minutes or until golden brown.
  7. Remove from pan.
