Glazed Banana Gingerbread

Ingredients

  • 2 1/2 c. flour
  • 1/2 c. brown sugar
  • 1/2 c. molasses
  • 1/4 c. milk
  • 3 overripe bananas mashed
  • 1 egg
  • 3 Tbsp. vegetable oil
  • 3 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. ground ginger
  • 1/2 tsp. salt

For Glaze:

  • 1 c. powdered sugar
  • 1 Tbsp. milk
  • 1/2 tsp. cinnamon or to taste

Instructions

  1. Combine all ingredients in a large mixing bowl and mix until well-blended.
  2. Pour into greased loaf pan and bake at 350 degrees for 60-70 minutes or until toothpick inserted in center comes out clean.
  3. Cool on a wire rack 10-15 minutes in pan; then remove from pan and allow to cool completely.
  4. Prepare glaze by combining ingredients; drizzle on bread.
