Spiced Cran-Peary Compote

Ingredients

  • 4 large firm pears peeled & chopped
  • 1/2 cup fresh cranberries
  • 1 cup water
  • 1/4 cup sugar
  • 1/2 tsp. vanilla
  • 1/2 tsp. cinnamon
  • 1/4 tsp. ginger
  • 1/4 tsp. allspice

Instructions

  • Combine water, sugar, vanilla & spices in a medium saucepan and bring to a boil.
  • Boil, stirring occasionally, 5 minutes or until mixture begins to thicken.
  • Add pears & cranberries and return to a boil.
  • Reduce heat and simmer 20 minutes or until fruit is tender and mixture has thickened.
  • Remove from heat. Mixture will continue to thicken as it cools.
  • Use immediately over french toast, waffles, or oatmeal OR store in fridge until breakfast!
