White Bean Pesto Soup

Ingredients

  • 3 15 oz. cans white beans, drained and rinsed
  • 4 c. chicken broth
  • 1 onion chopped
  • 2 Tbsp. olive oil
  • 2 tsp. minced garlic
  • 1 tsp. Italian seasoning
  • basil pesto - approx. 1 Tbsp. per bowl
  • crushed red pepper flakes optional

Instructions

  1. Heat olive oil in large saucepan over medium heat. Saute chopped onions and garlic 2-3 minutes.
  2. Add chicken broth, beans, and Italian seasoning.
  3. Partially mash beans and heat soup through.
  4. Serve, topped with pesto and red pepper flakes.
