Cookie Dough-Stuffed Peanut Butter Fudge

Ingredients

Cookie Dough

  • 1 stick unsalted butter softened
  • ¾ c. brown sugar I used dark brown sugar for more color contrast with the fudge
  • 1 tsp. vanilla
  • 1 c. flour
  • ½ tsp. salt
  • 2 Tbsp. milk
  • ½ c. mini chocolate chips

Fudge

  • 1 can 14 oz. sweetened condensed milk, divided in half
  • 16 oz. vanilla Candiquik divided in half
  • ½ c. peanut butter divided in half
  • ¼ c. mini chocolate chips

Instructions

Cookie Dough

  1. Cream butter and sugar; add vanilla and mix to incorporate.
  2. Add flour and salt and mix thoroughly. (Dough will be crumbly.)
  3. Stir in 2 Tbsp. milk and mini chocolate chips.

Fudge

  1. Pour ½ can of sweetened condensed milk into a small saucepan and heat slightly over low heat.
  2. Add 8 oz. vanilla Candiquik and ¼ c. peanut butter and stir over low heat until melted and smooth.
  3. Pour into 8x8 inch pan that has been sprayed lightly with nonstick cooking spray.
  4. Refrigerate until firm.
  5. Once firm, spread cookie dough on top of fudge layer and press down completely.
  6. Repeat fudge steps with remaining fudge ingredients; pour melted mixture over cookie dough layer.
  7. Sprinkle with ¼ c. mini chocolate chips.
  8. Refrigerate until firm. Cut into pieces.
