Ingredients
Cookie Cups

box Carrot Cake Mix
1/3
c.
oil
2
eggs
Frosting
6
oz.
cream cheese
softened
1
stick unsalted butter
softened
1
tsp.
vanilla extract
2
c.
powdered sugar
for a sweeter frosting, add 1 additional cup
Cinnamon
Carrot Cake M&M's
for topping
Instructions
Cookie Cups
Spray 32 mini muffin tins with nonstick cooking spray.
Mix cake mix, oil, and eggs in a medium mixing bowl.
Spoon into mini muffin tins ((slightly less than 1 Tbsp. per tin) and bake at 375 degrees for 8-10 minutes.
Cool 10 minutes in tins, then remove to a cooling rack to cool completely.
Frosting
Combine cream cheese, butter, and vanilla extract in a large mixing bowl. Mix on low speed 1 minute.
Add powdered sugar and beat on medium speed 2 minutes.
Pipe frosting onto cooled cookie cups; sprinkle with cinnamon and top with 1 M&M.
