Edamame Feta Salad

shelled
cooked edamame

c.
red pepper
chopped

c.
red onion
diced

oz.
feta cheese
cubed
1/4
c.
parsley
minced
1/4
c.
olive oil

Tbsp.
lemon juice

Tbsp.
fresh parsley
minced

tsp.
dried oregano

tsp.
kosher salt

California Roll Quinoa Salad

cooked quinoa

c.
matchstick carrots

mini cucumber
chopped

oz.
imitation crab meat
1/2
avocado

soy sauce

Tbsp.
rice wine vinegar

tsp.
ground ginger
Instructions
Edamame Feta Salad
Combine all salad ingredients in a medium bowl.
Combine all dressing ingredients, beginning with olive oil, in a small jar and shake well.
Add dressing to salad and enjoy!
California Roll Quinoa Salad
Combine all salad ingredients in a medium bowl.
Combine all dressing ingredients, beginning with soy sauce, in a small jar and shake well.
Add dressing to salad and enjoy!
