Ingredients

Edamame Feta Salad

  • 1 c. shelled cooked edamame
  • 1/2 c. red pepper chopped
  • 1/4 c. red onion diced
  • 4 oz. feta cheese cubed
  • 1/4 c. parsley minced
  • 1/4 c. olive oil
  • 2 Tbsp. lemon juice
  • 1 Tbsp. fresh parsley minced
  • 1/4 tsp. dried oregano
  • 1/4 tsp. kosher salt
  • fresh ground pepper

California Roll Quinoa Salad

  • 1 c. cooked quinoa
  • 1/3 c. matchstick carrots
  • 1 mini cucumber chopped
  • 4 oz. imitation crab meat
  • 1/2 avocado
  • 2 Tbsp. soy sauce
  • 2 Tbsp. rice wine vinegar
  • 1/4 tsp. ground ginger

Instructions

Edamame Feta Salad

  • Combine all salad ingredients in a medium bowl.
  • Combine all dressing ingredients, beginning with olive oil, in a small jar and shake well.
  • Add dressing to salad and enjoy!

California Roll Quinoa Salad

  • Combine all salad ingredients in a medium bowl.
  • Combine all dressing ingredients, beginning with soy sauce, in a small jar and shake well.
  • Add dressing to salad and enjoy!
