Strawberry Rhubarb Champagne Spritzer

  • 1 c. Brut champagne
  • 1/4 c. strawberry rhubarb simple syrup
  • fresh sliced strawberries
  • For the simple syrup:
  • 1 c. water
  • 1 c. sugar
  • 1 c. chopped rhubarb
  • 1 c. sliced strawberries


  1. For the simple syrup:
  2. Combine water and sugar in a medium saucepan; bring to a boil.
  3. Remove from heat. Stir in rhubarb and strawberries.
  4. Cover and let stand until cool.
  5. Strain syrup; store in refrigerator
  6. For the spritzer:
  7. Combine chilled champagne & simple syrup in a glass; add crushed ice (optional) and sliced strawberries.
