Sweet Potato & Kale Quinoa

Ingredients

  • 2 c. uncooked quinoa
  • 4 c. loosely packed chopped kale
  • 3 c. peeled chopped sweet potatoes
  • 2 c. grape tomatoes
  • 1 c. black beans rinsed & drained
  • ½ yellow onion sliced & sauteed

For Dressing:

  • ¾ c. olive oil
  • ¼ c. lemon juice
  • ¼ c. cilantro
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. spicy chili powder
  • 1 tsp. kosher salt

Instructions

  1. Cook quinoa according to package instructions. Drain.
  2. While quinoa is cooking, spread sweet potato wedges on baking sheet and roast at 375 degrees for 10-15 minutes.
  3. Add kale, roasted sweet potatoes, grape tomatoes, black beans, and sauteed onions to prepared quinoa.
  4. Prepare dressing by combining all ingredients and mixing well.
  5. Pour dressing over quinoa mixture and stir to combine.
