Sweet Potato & Kale Quinoa

Ingredients

  • 2 c. uncooked quinoa
  • 4 c. loosely packed chopped kale
  • 3 c. peeled chopped sweet potatoes
  • 2 c. grape tomatoes
  • 1 c. black beans rinsed & drained
  • 1/2 yellow onion sliced & sauteed

For Dressing:

  • 3/4 c. olive oil
  • 1/4 c. lemon juice
  • 1/4 c. cilantro
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1 tsp. spicy chili powder
  • 1 tsp. kosher salt

Instructions

  • Cook quinoa according to package instructions. Drain.
  • While quinoa is cooking, spread sweet potato wedges on baking sheet and roast at 375 degrees for 10-15 minutes.
  • Add kale, roasted sweet potatoes, grape tomatoes, black beans, and sauteed onions to prepared quinoa.
  • Prepare dressing by combining all ingredients and mixing well.
  • Pour dressing over quinoa mixture and stir to combine.
