Banana Bread Granola

Ingredients

  • 3 c. old fashioned oats
  • 1 c. chopped pecans
  • ¼ c. butter melted
  • ¼ c. brown sugar
  • ¼ c. honey
  • ½ tsp. cinnamon
  • 1 c. flaked sweetened coconut
  • 1 c. banana chips

Instructions

  1. Combine oats and pecans in a medium mixing bowl.
  2. Combine butter, brown sugar, honey and cinnamon in a small bowl and mix well.
  3. Drizzle butter mixture over oats mixture and mix until coated.
  4. Spread the mixture in a 10x15 inch baking sheet with sides.
  5. Bake at 250 degrees 35-40 minutes or until light brown.
  6. Stir in the coconut.
  7. Bake 45 minutes longer or until golden brown, stirring every 15 minutes.
  8. Remove from oven and stir in banana chips.
  9. Let stand until cool. Store in airtight container at room temperature.
