Ingredients
1 1/2c.all purpose flouror substitute 3/4 c. whole wheat flour + 3/4 c. all purpose flour
1tsp.cinnamon
1/2tsp.baking soda
1/4tsp.baking powder
1/4tsp.salt
1/4tsp.nutmeg
1/2c.Truvia Baking Blend (substitute 1/4 cup granulated sugar)
1/2c.grated carrots
1/2c.peeledgrated apples
1/4c.applesauce
1egg
1/2c.chopped walnuts
2Tbsp.ground flaxseed
1Tbsp.chia seeds
Instructions
Preheat oven to 350 degrees; grease loaf pan and set aside.
In a mixing bowl, combine flour, cinnamon, baking soda, baking powder, salt, and nutmeg.
In a separate bowl, combine Truvia, grated carrots, grated apples, applesauce, and egg. Mix well.
Add dry mixture to apple/carrot mixture; stir just until moistened.
Stir in walnuts, flaxseed, and chia seeds.
Spoon batter into prepared pan.
Bake for 55-60 minutes.
Remove from oven; cool on a wire rack 10 minutes.
Remove loaf from pan; cool completely on wire rack.
