Croque Madame

  • 1 Tbsp. mayo
  • 1 Tbsp. dijon mustard
  • 4 pcs. sourdough or white bread
  • 6 slices deli ham
  • 4 slices Swiss cheese
  • 2 extra large Phil's Fresh Eggs
  • 1 tsp. minced fresh chives

For sauce:

  • 1 Tbsp. salted butter
  • 1 Tbsp. all purpose flour
  • ¾ c. milk
  • 1 c. shredded Swiss cheese


  1. In a small bowl, mix mayo and dijon mustard until smooth.
  2. Divide evenly between two slices of bread, then top each with 3 slices deli ham, 2 slices Swiss cheese, and remaining piece of bread.
  3. Melt 1 Tbsp. butter in a large skillet.
  4. Grill sandwiches over medium heat until golden brown on one side.
  5. Add remaining 1 Tbsp. butter to skillet, flip, and grill until golden brown on both sides.
  6. *While sandwich is grilling, prepare sauce by melting 1 Tbsp. butter in a small saucepan.
  7. Stir in flour, then add milk and cook over medium heat, stirring until thickened and bubbly.
  8. Stir in Swiss cheese until melted.
  9. Line a rimmed baking sheet with foil.
  10. Place grilled sandwiches on baking sheet, then pour sauce over sandwiches evenly.
  11. Broil on low heat 2-4 minutes or until sauce is golden brown and bubbly.
  12. *While sandwich is broiling, cook 2 extra large Phil's Fresh Eggs over easy.
  13. Top each sandwich with 1 egg; sprinkle with fresh chives.
