Ingredients

  • 3 c. quick cooking oats
  • 2 Tbsp. Truvia Brown Sugar Blend (or 1/4 cup brown sugar)
  • 2 tsp. pumpkin pie spice
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. pumpkin puree
  • 2 c. milk
  • 2 eggs
  • 1 Tbsp. oil
  • 1/2 - 1 c. chocolate chips to taste
  • Truvia Nectar - for drizzling (optional)

Instructions

  • Preheat oven to 350 degrees.
  • Grease 18 regular size muffin cups; set aside.
  • In a large mixing bowl, combine dry ingredients.
  • Add remaining ingredients and stir until well blended.
  • Divide batter evenly among prepared muffin cups, filling almost all the way to the top.
  • Bake at 350 degrees 20-25 minutes until tops are set.
  • Drizzle with Truvia Nectar & enjoy!
