Ingredients

Crust

  • 2 c. Simple Truth flour
  • 3/4 c. butter softened
  • 1/3 c. Simple Truth sugar

Pumpkin Layer

  • 1 egg beaten slightly
  • 1 14 oz. can Simple Truth Pumpkin Puree
  • 3/4 c. Simple Truth sugar
  • 1 Tbsp. pumpkin pie spice
  • 1/2 tsp. salt

Pecan Pie Layer

  • 2 eggs beaten slightly
  • 1 c. Simple Truth sugar
  • 1 c. light corn syrup
  • 2 Tbsp. butter melted
  • 1 tsp. vanilla
  • 2 c. Simple Truth chopped pecans

Instructions

  • Preheat oven to 375 degrees.
  • Combine ingredients for crust in a medium mixing bowl; press into the bottom of a greased 9x13 inch pan.
  • Bake at 375 degrees for 10-12 minutes. Remove from oven and reduce heat to 350 degrees.
  • In a separate bowl, combine ingredients for pumpkin layer and stir until mixed.
  • Spread pumpkin mixture evenly over baked crust.
  • Combine ingredients for pecan pie layer and stir until mixed.
  • Spread pecan mixture evenly over pumpkin mixture.
  • Bake at 350 degrees for one hour.
  • Cool completely; store in refrigerator.
