- 1 head cauliflower cut into florets
- 1/2 yellow onion sliced
- 6 Tbsp. olive oil
- 1 Tbsp. curry powder
- 6 garlic cloves minced
- 1 1/2 tsp. sugar
- 3/4 tsp. ground ginger
- 3/4 tsp. kosher salt
- 1/8 tsp. pepper
- cilantro for garnish
Preheat oven to 400°.
Combine all ingredients except cilantro. Toss until cauliflower is evenly coated.
Spread cauliflower evenly on rimmed baking sheet.
Roast at 400° for 20 minutes or until cauliflower reaches desired tenderness.
