Ingredients

  • 1 head cauliflower cut into florets
  • 1/2 yellow onion sliced
  • 6 Tbsp. olive oil
  • 1 Tbsp. curry powder
  • 6 garlic cloves minced
  • 1 1/2 tsp. sugar
  • 3/4 tsp. ground ginger
  • 3/4 tsp. kosher salt
  • 1/8 tsp. pepper
  • cilantro for garnish

Instructions

  • Preheat oven to 400°.
  • Combine all ingredients except cilantro. Toss until cauliflower is evenly coated.
  • Spread cauliflower evenly on rimmed baking sheet.
  • Roast at 400° for 20 minutes or until cauliflower reaches desired tenderness.
