Blueberry Pie Bars

These Blueberry Pie Bars are the perfect summer treat! They're easy, delicious, and great for sharing...the ideal dessert for summer picnics, holidays, and parties! Sure to be a hit!

Ingredients

Bars

  • ½ c. salted butter at room temperature
  • ¾ c. sugar
  • 2 eggs
  • 1 tsp. vanilla
  • c. flour
  • ¾ tsp. baking powder
  • ½ tsp. cinnamon
  • 1 can Lucky Leaf Blueberry Pie Filling

Streusel Topping

  • ¼ c. flour
  • 2 Tbsp. sugar
  • 1 ½ Tbsp. butter melted

Drizzle

  • 1 c. powdered sugar
  • 4 tsp. milk
  • ½ tsp. vanilla

Instructions

  1. Cream butter; add sugar and beat well.
  2. Beat in eggs one at a time.
  3. Add vanilla.
  4. Gradually stir in sifted dry ingredients.
  5. Spread ¾ of dough in a lightly greased 8x11 or 8x8 inch baking pan.
  6. Spread blueberry pie filling over dough.
  7. Spoon remaining dough over pie filling, spreading lightly. *Not all pie filling will be covered.
  8. In a separate small bowl, combine streusel ingredients and sprinkle over the top of bars.
  9. Bake at 375 degrees for 35-40 minutes.
  10. Cool 15 minutes.
  11. In a small bowl, mix powdered sugar, milk, and vanilla until smooth; drizzle over bars.
