Stone Fruit Salad with Pecans & Blue Cheese

This Stone Fruit Salad combines sweet plums and nectarines with crunchy pecans, blue cheese, and balsamic vinaigrette. It's an explosion of flavor in every bite.....the perfect end of summer salad!

Ingredients

  • 4 c. mixed greens
  • 1/2 nectarine thinly sliced
  • 1/2 plum thinly sliced
  • 1/4 c. pecans
  • 1/4 c. blue cheese
  • For dressing:
  • 1/3 c. olive oil
  • 1/3 c. balsamic vinegar
  • 1/2 Tbsp. honey
  • juice of 1/2 lemon
  • 1/2 tsp. pepper
  • 1/4 tsp. salt

Instructions

  • Prepare salad by layering mixed greens, plums, nectarines, pecans, and blue cheese.
  • Prepare dressing by combining all ingredients in a small mason jar and shaking vigorously.
  • Add dressing to salad as desired.
