Fresh Corn Salsa

  • 2 c. corn kernels fresh or frozen
  • 1/2 c. purple onion diced
  • 1/2 c. red pepper diced
  • 1-2 jalapeños seeded and minced
  • 1/2 c. cilantro chopped
  • 4 tsp. lime juice
  • 1 tsp. kosher salt


  1. Saute corn over medium-high heat until kernels begin to char. Set aside to cool.
  2. In a medium bowl, combine onion, red pepper, jalapeno, cilantro, lime juice, and salt.
  3. Add sautéed corn and stir to combine.
