Peanut Butter Cup Stuffed Ginger Cookies

Ingredients

  • 1 c. packed brown sugar
  • ¾ c. butter at room temperature
  • ¼ c. molasses
  • 1 egg beaten
  • 1 teaspoon vanilla
  • 2 ¼ c. flour
  • 2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ½ teaspoon cloves
  • ¼ teaspoon salt
  • granulated sugar

Instructions

  1. In a large mixing bowl, cream butter, sugar, molasses, egg, and vanilla.
  2. Add dry ingredients and mix until dough is well blended.
  3. Roll into 1 ½ inch balls; then roll in granulated sugar.
  4. Place dough balls in well-greased mini muffin tins.
  5. Bake at 375 degrees for 9-12 minutes.
  6. Remove from oven and place a miniature Reese's Peanut Butter Cup in the center of each cookie, pressing down gently.
  7. Twist cookie cups to remove from pan.
