Ingredients

  • 4 large tomatoes, peeled & quartered
  • 1 c. red onion, roughly chopped
  • 2 Tbsp. fresh parsley
  • 1 c. Simple Truth vegetable stock
  • 2 Tbsp. olive oil
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. lemon juice
  • 2 cloves minced garlic
  • 1 tsp. salt
  • 1/2 c. diced tomatoes, seeded
  • 1/2 c. diced cucumbers, seeded
  • 1/2 c. diced red peppers
  • 1/2 c. diced red onion

Instructions

  • In a blender, combine 4 large tomatoes, 1 c. red onion, parsley, vegetable stock, olive oil, red wine vinegar, lemon juice, garlic, and salt. Blend until smooth.
  • Stir in diced tomatoes, cucumbers, red peppers, and red onion.
  • Serve chilled.
